Rapini with Ashanti Pepper and Browned Goat Butter

 

1 lb./425g. fresh rapini

4 tablespoons goat butter

Splash of Sherry

1 teaspoon/2g. freshly ground Ashanti pepper

Finishing salt

 

Clean and trim the rapini and blanch in heavily salted water. Thoroughly drain and set aside.

 

In a large skillet, heat the goat butter until just beginning to brown. Add, in order: Sherry, ground Ashanti pepper and rapini. Sauté until liquid is  gone and just tender. Plate, finish with a large-flake sea salt and serve immediately.

 

Serves 4 as a vegetable course.

 

Notes:

 

·    We use plain (unsmoked) white flake finishing salt (Maldons or Camargue) for this dish.

 

·    Goat butter can be found in many fine grocery stores. In the Portland area, it can be found at New Seasons.
