Pork Chops with Port and Cherries
A recipe that my aunt uses for all parties. Really- it’s almost a family staple now.
3 (8-ounce) pork chops 2 ounces melted butter 3 oz port salt and pepper to taste
Cherry Sauce 1 lb cherries, pitted and sliced ¼ cup port 2 tablespoon sugar 1 teaspoon cornstarch Salt to taste
Mix port sugar, cornstarch, and salt -bring mixture to a boil until sauce thickens. Add the cherries. Set aside.
Sprinkle pork with salt and pepper, brush with butter. Bake for 30 minutes at 325° F or until cooked and tender. Put the pork on a large serving dish or roasting pan- pour cherry sauce over.
Get everyone to the table. Put the other food on the table as well. (if you’re doing tableside service, that is). Pour port over the pork. Put the roasting pan somewhere safe and out of reach of children- using long wooden matches, ignite the pork. When the flame goes out and liquor has burned off, you are ready to serve.
