Penne with Pumpkin and Parmesan

 

3 cups chicken stock

3 tablespoons olive oil

1 shallot, minced

2 cup pumpkin puree

8 oz cream cheese, softened and cut into cubes

¼ teaspoon ground nutmeg

2 oz butter

8 ounces cremini mushrooms, sliced thinly

1 pound penne, cooked and drained

Salt and pepper

4 oz grated Parmesan cheese

 

Heat a sauce pot over medium high heat. Add the olive oil. Sauté the shallot until it is translucent and has softened. Add the chicken stock and bring to a simmer. Reduce the chicken stock by half.

 

Meanwhile, melt the butter in a large skillet. Add the mushrooms and sauté until they are lightly brown and cooked through. Reduce the heat, and whisk in the softened cream cheese. Stir in the pumpkin puree. Season with a pinch of salt and the nutmeg.  Whisk in the reduced chicken stock.

 

Place the warm pasta in a large bowl. Add sauce and; toss to coat. Stir in two tablespoons of parmesan cheese. Adjust the seasoning to taste with additional salt and pepper.  Serve, garnished with extra Parmesan cheese.
