Peanut Butter Brownies

 

As a get-well present, a friend recently brought me a plate of peanut butter brownies. Usually, I like my brownies to be classic: dark, chocolaty, and rich, without add ins (more chocolate is ok). But these were really amazing: I asked her to share the recipe, which she confessed was adapted from a Gourmet recipe a couple of years ago. This is her adaptation, which would be perfect for any barbecue, picnic, or summery get together.

 

6 ounces cream cheese, room temperature

¾ cup smooth old-fashioned peanut butter

1/3 cup brown sugar

2 large eggs

2 tablespoons flour

1 teaspoon vanilla

 

1 stick butter

1 cup semi sweet chocolate, chopped

2 large eggs

1 cup sugar

1 teaspoon vanilla

1/4 teaspoon salt

3/4 cup unbleached all purpose flour

¾ cup chocolate chips (you can use peanut butter or chocolate)

 

Preheat oven to 350°F. Grease an 8 x 8 x 2-inch baking pan.

 

Blend together cream cheese, peanut butter, brown sugar, eggs, vanilla and flour in a medium bowl.

 

In a heavy saucepan, combine the butter and chocolate. Stir until melted and smooth. Cool from room temperature.

 

Meanwhile, whisk the eggs, sugar, vanilla and salt together. Add melted chocolate- stir to combine. Add flour. Fold in chocolate chips.

 

Spread 1/3 of the chocolate mixture in the bottom of the pan. Drop tablespoonfuls of 1/2 the peanut butter mixture all over the batter. Repeat with spoonfuls of the second third of the chocolate mixture, then repeat with the remaining peanut butter mixture, and finally the last bit of the chocolate batter. With a butter knife, cut through the batters in a swirl pattern. Smooth top before baking.

 

Bake for about 25-30 minutes.
