Curried Black Eyed Pea Salad
It’s different than the traditional Hoppin John, served most often at Southern New Year’s feasts, but change is good when it brings spicy curry and a refreshing side dish like this one. Plus, you can make it up to two days ahead, which is helpful when entertaining.
2 cups cooked black beans, drained and rinsed 2 cups cooked black-eyed peas, drained and rinsed 1/2 cup onion, chopped 1 cup cooked diced ham ˝ cup olive oil, plus more as needed 2 tablespoons red wine vinegar 1/2 cup green onions, chopped 2 teaspoons curry powder 1/2 teaspoon crushed red pepper Salt Pepper 1 red bell pepper, chopped (or use a combination of red and yellow) 1 cup corn (this time of year, use frozen corn that you’ve thawed) 1/4 cup fresh cilantro, minced
In a large sauté pan, heat a tablespoon or so of olive oil. Add the ham and sauté for 3-5 minutes, until lightly brown and crisp. Add the beans, peas, and half a cup of water- stir well. Reduce the heat and simmer for 30 minutes. (The liquid will be absorbed). In a large bowl, whisk together ˝ cup olive oil and vinegar, along with the curry powder, red pepper and salt to taste. Add the corn, red bell pepper, and green onions to the beans in the sauté pan, toss well.
Add the cilantro to the dressing. Remove the sauté pan from the heat. Allow to cool slightly, then add the dressing and toss well. Serve immediately, warm or at room temperature.
