Cream Cheese Cupcakes

 Adapted from the Magnolia Bakery, this is a tender vanilla cake. We put it in cupcake pans instead of a big cake pan, and added a super creamy cream cheese frosting that is fluffier than most. If you like, add food coloring to the frosting for a colorful display.

Cupcakes

2 ½ cups flour

1 tablespoon cornstarch

½ teaspoon salt

2 teaspoons baking powder

2 cups sugar

1 cup butter, softened

1 cup whole milk

2 teaspoons vanilla

4 eggs

 Frosting

8 oz cream cheese, softened

3 oz butter, softened

6 cups powdered sugar

1 teaspoon vanilla

Green food coloring, optional

Green sprinkles, optional

Preheat the oven to 350°F. Line 2 12-cupcake cupcake pans with paper liners or spray with cooking spray.

In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, cream together the butter and sugar. Whisk in the eggs, one at a time, beating well. Whisk in the milk and vanilla together. Beat in the dry ingredients a little at a time. Divide the batter among the cupcake cups.

Bake for about 18-22 minutes, or until the cakes are golden brown and a toothpick inserted into one of them comes out clean. Cool for 15 minutes in the pan, then turn out onto a rack. Allow to cool completely before frosting.

To make the frosting, cream the butter and cream cheese together in a large bowl. Add the vanilla, mixing well. (If using food coloring, add it with the vanilla). On low speed with an electric mixer (or in a stand mixer), add the powdered sugar, a bit at a time.  Frost cooled cakes or cupcakes, topping with sprinkles, if desired.
