Caper Aioli

The Torre Saracena capers are large than most capers, and have a fresher flavor. The brininess of the capers in the rich aioli brings the clean fish flavors to their peak.

This condiment is the perfect companion recipe to serve with simply grilled tuna. Season the tuna with salt and pepper, drizzle it with olive oil, and grill it to the desired doneness. Pour a glass of your favourite wine and enjoy!

 

4 garlic cloves

Salt

12 large egg yolks

4 teaspoons fresh lemon juice

1 teaspoon Dijon mustard

1 cup extra-virgin olive oil

Pepper

2 tablespoons Torre Saracena capers, coarsely chopped

 

Using a heavy knife, mince and mash garlic to a paste with just a pinch of salt. In a large bowl, whisk together the egg yolks, lemon juice and mustard. Drizzle the olive oil in slowly, whisking continuously until all of the oil is incorporated and the mixtures emulsified. Whisk in the garlic paste, season with salt and pepper. Stir in the capers. Chill until ready to use.
