Beer Braised Beef

8 oz bacon, diced

2.5 lbs beef chuck, cut into chunks

1 teaspoon salt, divided

½ teaspoon sage, diced

½ teaspoon pepper

1 tablespoon olive oil

1 onion, chopped

1 carrot, chopped

5 cloves garlic, chopped

1 cup dark beer

1 cup beef broth

6 red potatoes, cut in half

2 parsnips, cut in 2 inch pieces

2 ribs celery, cut in 2 inch pieces

1 tablespoon parsley, diced, optional

 Heat the oven to 325°F.

 In a large Dutch oven, cook the bacon until crisp. Remove from pan. Add beef to pan, brown well. Sprinkle with ½ teaspoon salt and the pepper. Place in the oven while you cook the vegetables. In a separate skillet, cook the onion and carrot over medium about 3 minutes. Add the garlic for the last minute, but do not brown. Add the beer, stirring well and deglazing the pan. Add the beef broth, and bring to a boil.

 Carefully remove the Dutch oven from the oven. Add the vegetables and liquid to the beef, cover tightly with foil and the lid. Bake for 1 hour 15 minutes. Add the remaining vegetables and ½ teaspoon salt. Sprinkle bacon over the vegetables. Bake uncovered for 1 hour or until beef is tender when pierced with a fork. Serve in bowl garnished with parsley, if desired.
